Properties:
Withstands high temperature processing.

Application:
Mayonnaise, sauces, semi-finished / ready mixes, pasta, desserts, cream, canned foods.

Recovery:
To one part of powder to add 1.30 parts of water to obtain 2.30 parts of liquid egg yolk (one kilogram of a liquid yolk powder equivalent to approx. 115 eggs).
For convenience, you can mix the egg yolk with other powdered ingredients before restoration.
